炸 — zhá

1. to deep-fry (in hot oil)

   我把土豆炸成金黄色。 wǒ bǎ tǔdòu zhàchéng jīnhuángsè — I deep-fried the potatoes until they were golden.

2. (colloq.) to blanch (briefly in hot water) (used for vegetables)

   把青菜在开水里炸一下就好了。 bǎ qīngcài zài kāishuǐ lǐ zhà yīxià jiù hǎo le — Just blanch the greens briefly in boiling water.

炸 — zhà

1. to burst; to explode; to blow up; to bomb

   那座桥在晚上被炸毁了。 nà zuò qiáo zài wǎnshàng bèi zhàhuǐ le — That bridge was blown up at night.

2. (colloq.) to fly into a rage; to blow up (become very angry)

   他被批评之后马上就炸了。 tā bèi pīpíng zhīhòu mǎshàng jiù zhà le — He flew into a rage as soon as he was criticized.

3. (colloq.) to scamper off; to scatter; to break up suddenly

   听到放鞭炮声，孩子们一下子炸开跑了。 tīngdào fàng biānpàoshēng háizi men yīxiàzi zhàkāi pǎo le — Hearing the firecrackers, the children scattered and ran off.
